Hyderabadi dum biryani in Miami

Marinated meat and long-grain basmati layered in one pot, sealed with dough and slow-cooked so the rice takes on every spice. The dish we're named for.

What “dum” means

Dum is the slow, sealed cooking that defines Hyderabadi biryani. Partly cooked basmati is layered over marinated meat, the pot is closed, and it cooks on low heat so steam and spice move through every layer. The result is separate, fragrant grains and tender meat — not fried rice with curry on top. Every biryani comes with mirchi ka salan and raita.
