Goat Dum Biryani in Miami
Bone-in goat, cooked until it slips off the bone, under a layer of saffron basmati — a single portion or a family pack that feeds four.
Why goat
Goat is the traditional meat for Hyderabadi biryani: it takes a long marinade well and releases a richer stock than chicken, which is what flavors the bottom layers of rice. We cook it on the bone for that reason. If you'd rather have it boneless, the Boneless Goat Biryani is on the menu too. On weekends, look for the Nawabi Mutton Juicy Mandi and Mutton Haleem, and the goat curries on the Sunday buffet.
SERVED
In the handi, with salan and raita
Mirchi ka salan (peanut-sesame chilli gravy) and cucumber raita come with every biryani. Add Gongura Goat Curry or Hyderabadi Spicy Mutton Curry if the table wants more gravy.
